APPLE AND COCONUT BANANA BREAD

INGREDIENTS:

  • 3 apples, cored and pulsed with 1/4 water (forms a puree)

  • 2 eggs lightly beaten

  • 1 cup wholemeal spelt flour

  • 1 cup buckwheat flour

  • 2 tsp baking powder

  • ½ tsp cinnamon

  • 1/3 cup shredded coconut

  • 1/4 cup coconut oil (by the jar, and spray)

METHOD:

  1. Pre heat the oven to 190 degrees and spray a bread baking dish with coconut oil

  2. Place the pulsed apples in a saucepan with 1/4 cup coconut oil. Cook on a low to medium heat for five minutes, or until stewed.

  3. Set aside to cool.

  4. Lightly beat eggs in a bowl.

  5. Sieve flours and combine in a bowl with baking powder and cinnamon.

  6. Add apple and egg mixture and mix until combined. Do not over mix or the mixture will become tough.

  7. Add the shredded coconut.

  8. Place in oven for 25-30 minutes, or until lightly browned and cooked through.
