

BROWN RICE & QUINOA PIZZA
TOPPED WITH CHICKEN AND VEGGIES
INGREDIENTS:

2 cups cooked brown rice & quinoa

2 eggs
-
1 pinch of salt

2 tsp mixed herbs
-
cracked pepper
-
1/4 cup shaved parmesan cheese
-
200g diced chicken breast
-
200g steamed vegetables (cauliflower, broccoli)
-
small handful of spinach
-
60g mozzarella cheese
-
chilli (for topping)

METHOD:

Place cooked brown rice and quinoa in a food processor with the eggs, cheese and herbs.

Pulse until all ingredients are well mixed.

Place mix in the fridge for approximately 30 minutes.

Spread mix out into two round pizzas and place in the oven on 220 degrees for approximately 20 minutes or until it has started to brown. Remove.

Top pizzas with diced tomatoes, chicken, vegetables, cheese and chilli. Sprinkle spinach on top.

Place in the oven for a further 20 minutes or until cheese is melted.
