MEXICOLA

A MEXICAN FEAST INSPIRED BY "MEXICOLA RESTAURANT" IN SEMINYAK, BALI

INGREDIENTS:

CHILLI CON CARNE

​

  • 250g turkey mince

  • 1 diced onion

  • 1 cup diced capsicum (red and green)

  • 1 cup chicken stock

  • 400g black beans

  • 1/2 cup corn kernels

  • 400g diced tomatoes

  • paprika, cumin, chilli, marjoram, oregano, garlic

 

SPELT TORTILLA

 

  • 1 cup spelt flour

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 1/2 cup water

 

METHOD:

  1. Cook the onion and turkey in a large pan until onion starts to brown.

  2. Add the capsicum and spices.

  3. Pour in the stock and tomatoes.

  4. Add the beans and corn last.

  5. Let simmer for about 20 minutes

  6. In an electric mixing bowl mix the flour, salt and baking powder.

  7. Slowly added the water until it made a doughy mixture.

  8. Remove the dough and roll it into small balls.

  9. Use a rolling pin to roll out the balls onto some spelt flour.

  10. Cook the tortillas one at a time in some olive oil on the pan. Make sure the tortillas are very thin!

Served with salsa, light tasty cheese, spinach and diced tomatoes
