BROWN RICE PATTIES

INGREDIENTS:

  • 1 cup brown rice & quinoa

  • 2 cups of vegetable stock

  • 1 carrot, grated

  • 2 handfuls of spinach

  • 1 egg (or egg substitute)

  • 1 tsp garlic

  • 1 tsp turmeric

  • 1 tsp paprika

  • 1/2 tsp chilli

  • 1 cup quinoa bread crumbs

METHOD:

​

  1. Cook the brown rice and quinoa in 2 cups of stock.

  2. Add the garlic, turmeric, paprika, chilli and spinach. Stir well. Set aside to cool.

  3. In a mixing bowl combine the carrot, bread crumbs and rice mixture. Add the egg and stir well. 

  4. Place mixture in the fridge to cool down (roughly 30 minutes)

  5. Remove and shape into patties.
