BROWN RICE PATTIES
INGREDIENTS:

1 cup brown rice & quinoa
-
2 cups of vegetable stock
-
1 carrot, grated
-
2 handfuls of spinach
-
1 egg (or egg substitute)
-
1 tsp garlic
-
1 tsp turmeric
-
1 tsp paprika
-
1/2 tsp chilli
-
1 cup quinoa bread crumbs

METHOD:

Cook the brown rice and quinoa in 2 cups of stock.

Add the garlic, turmeric, paprika, chilli and spinach. Stir well. Set aside to cool.

In a mixing bowl combine the carrot, bread crumbs and rice mixture. Add the egg and stir well.
-
Place mixture in the fridge to cool down (roughly 30 minutes)
-
Remove and shape into patties.
