BAKED OATS & PUFFED QUINOA

INGREDIENTS:

(MAKES ROUGHLY 8 SERVINGS)

  • 2 cups rolled oats

  • 1 cup puffed quinoa

  • 1 cup sunflower seeds & pepitas

  • 2 tsp cinnamon

  • coconut oil spray

METHOD:

​

  1. Pre heat oven to 220 degrees.

  2. Combine the oats, puffed quinoa, seeds and cinnamon in a bowl. Stir well to ensure the cinnamon is well distributed throughout the mix.

  3. Spread the mixture on a baking tray lined with baking paper. Shake to spread out over the whole tray.

  4. Spray well with coconut oil.

  5. Bake for 15 minutes. Half way through cooking, shake the tray to rotate the ingredients.

For serving: 1/2 cup Baked Oats & Puffed Quinoa with 1/2 cup Coconut or Almond Milk. You may wish to top with some fresh fruit.
