BAKED OATS & PUFFED QUINOA
INGREDIENTS:
(MAKES ROUGHLY 8 SERVINGS)

2 cups rolled oats
-
1 cup puffed quinoa
-
1 cup sunflower seeds & pepitas
-
2 tsp cinnamon
-
coconut oil spray

METHOD:

Pre heat oven to 220 degrees.

Combine the oats, puffed quinoa, seeds and cinnamon in a bowl. Stir well to ensure the cinnamon is well distributed throughout the mix.

Spread the mixture on a baking tray lined with baking paper. Shake to spread out over the whole tray.

Spray well with coconut oil.
-
Bake for 15 minutes. Half way through cooking, shake the tray to rotate the ingredients.

For serving: 1/2 cup Baked Oats & Puffed Quinoa with 1/2 cup Coconut or Almond Milk. You may wish to top with some fresh fruit.
