POWER SALAD

INGREDIENTS:

  • 500g Chickpeas (drained and rinsed well)

  • 2 cups Red Cabbage

  • 1 Green Capsicum

  • 1 Carrot

  • 2 tbs Chia Seeds

  • 1/2 Lemon (or lemon juice)

  • 1 Garlic Clove

  • 20ml Extra Virgin Olive Oil

  • 20ml Honey

  • Balsamic Vinegar (to taste)

  • Pepper and Chilli

METHOD:

  1. Drain and rinse the chickpeas in a strainer and place in a large bowl. 

  2. Chop the cabbage and capsicum into squares and place in the bowl. Mix in with chickpeas.

  3. Grate the garlic clove and the carrot and add to the mixture stirring to combine all ingredients.

  4. Add the chia seeds by sprinkling them over ingredients whilst stirring.

  5. Squeeze the lemon juice over the salad, drizzle with honey and olive oil.

  6. Add the balsamic at the end (however much you desire – some people don’t enjoy the taste of balsamic so feel free to leave it out).

* Pepper and chilli can also be added to the salad for a bit of a kick – also great for your immune system. Adding chilli also means that more calories are burned on consumption.
