ONE PAN EGGS

INGREDIENTS:

(SERVES 1)

  • 2 eggs

  • 1/4 cup milk

  • 1 tsp minced garlic

  • 1 tsp turmeric

  • 1/2 tsp cayenne pepper

  • 100g diced sweet potato

  • 1 diced mushroom

  • 1 cup chopped kale

METHOD:​

​

  1. Heat 1 teaspoon of olive oil in a small pan (approximately 10").

  2. Place diced sweet potato, garlic, cayenne pepper and turmeric in the pan. Stir well. Cover with alfoil and leave to cook for 10 minutes. Stir occasionally. 

  3. When the diced sweet potato starts to soften, add the kale and mushroom. Stir and cover with alfoil for a further 5 minutes.

  4. Whisk the eggs and milk in a small bowl. Pour over sweet potato mixture.

  5. Cover the mixture with alfoil and leave for a further 10 minutes on a low heat. The egg mixture should be cooked all the way through.

  6. Crack pepper on top.
