CUMIN BAKED CHICKEN

INGREDIENTS:

  • 400g chicken breast (sliced into quarters)

  • 150g pumpkin

  • 150g sweet potato

  • 100g broccollini

  • 1/3 cup extra virgin olive oil

  • 1/3 cup red wine vinegar

  • 2tsp cumin

  • oregano

METHOD:​

  1. Pre heat oven to 200 degrees and grease a large baking tray.

  2. Roughly chop the vegetables and place in the tray with the chicken.

  3. In a bowl mix the red wine vinegar, cumin, olive oil and oregano. Pour this mixture over the vegetables and chicken. Stir to ensure the vegetables and chicken are well covered in the wet mix.

  4. Cook the oven in the oven for 50 minutes. Take out and stir.

  5. Steam the broccollini in the microwave for 3 minutes and add to the chicken and vegetables. Toss the broccollini through using tongs.

  6. Bake in the oven for a further 10 minutes.
