PORK THAI CURRY

WITH TRI GRAINS

INGREDIENTS:

  • 1tsp cumin

  • 2tsp coriander

  • 1/2 tsp black pepper

  • 1/4 cup low sodium soy sauce

  • 1/2 tsp hot chilli flakes

  • 1tbs minced garlic

  • 1tsp minced ginger

  • 400ml light coconut milk

  • 125g broad beans

  • 125g chopped cauliflower

  • 125g diced zucchini 

  • 4 "pork" er house steaks

  • 1 cup tri grain cooked in 2 cups of water (see notes below)

METHOD:

  1. Marinade the pork steaks in the herbs and soy sauce for approximately 1/2 an hour.

  2. In a pan, spray some coconut oil and cook the pork steaks for three minutes on each side in the marinade.

  3. Add the vegetables and cover with alfoil for approximately 15 minutes.

  4. Add the coconut milk and stir to mix all ingredients. Cover with alfoil again for another 15 minutes on a low heat.

  5. Serve with tri grain.

Tri Grain: I make my own grain mix using quinoa, brown rice and black rice. You can buy the quinoa and brown rice mix from Coles and Woolworths, as well as the black rice. I combine both packets in a large Tupperwear container and use in place of white or basmati rice. High protein and all natural.
