TURKEY AND FETA BURGERS
INGREDIENTS:

500g turkey mince
-
1/2 cup crumbled feta
-
1/3 cup peas and corn
-
2 tsp minced garlic
-
1/2 tsp chilli flakes
-
1/2 cup wilted spinach
-
1/4 cup buckwheat flour
-
1 egg
-
mixed herbs
-
cracked pepper

METHOD:

In a large bowl mix the turkey, feta and buckwheat flour until well combined.

In a smaller bowl, whisk the egg in the garlic and herbs. Pour over the turkey mixture until well combined.

Add the remaining ingredients and stir to ensure all the ingredients are very well mixed.

Place in refrigerator for approximately 30 minutes.

Cook on a low-medium heat in some extra virgin olive oil.

Serve with roasted vegetables and home-made tomato chutney (see EWC recipe)
