COCONUT CHICKEN BURGERS
ON WHOLEMEAL WITH TOMATO RELISH
INGREDIENTS:​
(makes 4 burgers)

500g chicken breast
-
1/2 cup coconut flour
-
1/4 cup olive oil
-
1tsp chilli
-
2tsp oregano
-
cracked pepper
-
4 wholemeal rolls
-
8 slices of tomato
-
spinach
​
FOR THE RELISH:​
​
-
500g fixed tomatoes
-
2 small onions
-
parsley, pepper, sea salt & oregano
-
2tbs red wine vinegar
-
1tsp stevia
-
1 chilli, deseeded and finely chopped
​
METHOD:
​

Slice chicken breasts into 125g.
-
Toss the chicken through the coconut flour, oregano, chilli and pepper.

Pour over olive oil and stir to form a paste over the chicken. Refrigerate for 30minutes.

Pan fry chicken in olive oil, on a medium heat until, until cooked.

Cut the rolls in half. Place tomato slices on bottom half of rolls and grill until golden brown.
-
Top with chicken, spinach and relish.
