COCONUT CHICKEN BURGERS

ON WHOLEMEAL WITH TOMATO RELISH

INGREDIENTS:​

(makes 4 burgers)

  • 500g chicken breast

  • 1/2 cup coconut flour

  • 1/4 cup olive oil

  • 1tsp chilli

  • 2tsp oregano

  • cracked pepper

  • 4 wholemeal rolls

  • 8 slices of tomato

  • spinach

FOR THE RELISH:​

​

  • 500g fixed tomatoes

  • 2 small onions

  • parsley, pepper, sea salt & oregano

  • 2tbs red wine vinegar

  • 1tsp stevia

  • 1 chilli, deseeded and finely chopped

​

METHOD:

​

  1. Slice chicken breasts into 125g. 

  2. Toss the chicken through the coconut flour, oregano, chilli and pepper.

  3. Pour over olive oil and stir to form a paste over the chicken. Refrigerate for 30minutes.

  4. Pan fry chicken in olive oil, on a medium heat until, until cooked. 

  5. Cut the rolls in half. Place tomato slices on bottom half of rolls and grill until golden brown.

  6. Top with chicken, spinach and relish.
