COCOA SLICE

INGREDIENTS:

(SERVES 6)

  • 1 cup wholemeal spelt flour

  • 1 1/4 tsp baking powder

  • 2 tbs almond meal

  • 3 tsp cocoa powder

  • 6 dates, roughly chopped

  • 1 tsp vanilla essence

  • 2 eggs

  • 100g melted nuttelex (butter alternative)

  • 1/3 cup stevia

  • 2 tsp chia seeds

  • olive oil spray

METHOD:

  1. Pre heat oven to 180 degrees and spray a round 10" baking dish with olive oil spray.

  2. Sift the flour and cocoa powder into a large mixing bowl.

  3. Add remaining ingredients and mix well with an electric mixer until a nice batter is formed. If too dry, add a little bit of olive oil. If too wet, add more almond meal.

  4. Use a wet spoon to spread mixture in the round baking dish - approximately 1cm in thickness.

  5. Bake for 15 - 20 minutes. The top will be crispy and the middle will be soft. To check, press the top of the slice to see if it bounces back.
