

COCOA SLICE
INGREDIENTS:
(SERVES 6)

1 cup wholemeal spelt flour

1 1/4 tsp baking powder

2 tbs almond meal

3 tsp cocoa powder

6 dates, roughly chopped

1 tsp vanilla essence
-
2 eggs
-
100g melted nuttelex (butter alternative)

1/3 cup stevia
-
2 tsp chia seeds

olive oil spray

METHOD:

Pre heat oven to 180 degrees and spray a round 10" baking dish with olive oil spray.

Sift the flour and cocoa powder into a large mixing bowl.

Add remaining ingredients and mix well with an electric mixer until a nice batter is formed. If too dry, add a little bit of olive oil. If too wet, add more almond meal.

Use a wet spoon to spread mixture in the round baking dish - approximately 1cm in thickness.

Bake for 15 - 20 minutes. The top will be crispy and the middle will be soft. To check, press the top of the slice to see if it bounces back.
